Halfway through my whole30 challenge!
Last night's dinner - my friend Amy's chili plus a bunch of beet chips that I made. I'll have to find the recipe for the chili. The beet chips were really easy. Slice a bunch of beets really thin (I used a mandoline), brush coconut oil on them, bake for 20 min. Rotate tray and chips and bake for anther 20mi or until they get crispy. Sprinkle with sea salt and let cool on a cookie rack. Voila! Beet chips. YUUMMM.

Fiesta Stuffed Peppers
I've been posting my meals on Instagram (search for #mohanseat) and Facebook for the month of July because of the Whole 30 challenge I'm doing with my gym, FitWit!
We had a potluck for the ppl doing this challenge last night and this was my contribution. Very easy to make! Brown grass-red beef with onions, garlic, mushroom, jalapeƱo and the "leftover" bell peppers (when you're creating the bell pepper "cups", dice the tops of the peppers and add to the beef mixture). Spoon the mixture into the bell peppers and the bake at 350 for about 25 min. (I added salsa to the peppers before baking because it looked a little dry.) Bon appetite!
